Salmon is a quick and healthy fish to make in as little as 30 min. The heart healthy fats in salmon make this fish a great choice to add to your diet. I usually buy a large boneless skinless salmon fillet and portion it out and save the scraps and belly meat for chowder by placing it in a freezer bag for another day. To change up this recipe, sometimes I add grated fresh ginger to the brown sugar.
Preheat oven to 400 degrees and line a rimmed baking sheet with foil and spray with cooking spray. Portion out 2 lbs. of salmon by cutting and trimming to desired portion sizes. Spread Dijon mustard on each portion, and season with salt and pepper.
Next, top each portion with brown sugar. Pack it on and press down so it is about 1/4 inch thick on each one.
Place on the foil lined rimmed baking sheet that has been sprayed with cooking spray, and bake at 400 degrees for 20 -25 min until fish flakes easily.
Once salmon is done, spoon pan drippings (which should resemble syrup), over the salmon before serving. Serve with you favorite side dishes such as rice, vegetables, tossed salad, or you can choose the Herbed Garlic Potatoes, which I posted previously and can be found by searching under recipes. Oh, my, cod! Just got done making and eating this outstanding salmon meal. I was a little skeptical at first with the pairing of mustard and brown sugar, but there was no need to be. The two complimented each other beautifully, and then the sweetness of the carrots just added to the enjoyment. I followed the recipe to the T, and it came out looking like your posted photo, and the taste was “Top Shelf”.
