Sometimes I feel like having dessert but do not want to spend a lot of time making it, and without a bunch of calories. This strawberry parfait is quick, light, and easy, and good enough for company.
Start off by slicing up some fresh strawberries and place them in a bowl with a some sugar or stevia to sweeten to your liking. If you have the time, let the strawberries sit in the fridge for a few minutes up to a few hours to macerate and develop their juices. The sugar helps them to release their natural juices.
Next, find a pretty glass and once strawberries are ready, place some strawberries in the bottom of the glass. Then, put in a layer of whipped cream (you can use the kind in a squirt can), and repeat layers to the top of the glass. When all the glasses are done, top each parfait with one of those little gold foil wrapped chocolate candies with the hazelnut inside and voila! While this dessert is so simple a child could make it, I like it because it is fresh, light, and my family loves it. Also, the ingredients are easy to find and I often have them on hand when unexpected guests arrive. Enjoy!
