Most people do not think of their rice cooker as a vessel for creating a complete meal in one pot; however, it can produce wonderful results. The key I found is not to use more than two cups of rice because overloading the cooker can result in soggy rice. Using two cups of rice with other ingredients produces a perfect meal. Here’s how to make it:
Start by digging out your rice cooker, and then prep your veggies and sausage.
Chop 1 medium onion, 2 cups celery chopped with the leaves, 2 cups of chopped carrots, and 1 large clove of garlic minced. Place in a bowl and set aside.
Slice 12 oz. of Cajun style smoked andouille sausage 1/4 inch thick at an angle and place in a bowl by itself or with the cut up vegetables. I like to use Aidells brand if you can find it otherwise, any brand of smoked andouille will work.
Measure out 2 cups of rice, I used jasmine rice. Follow the manufactures instructions for rice but I use 1 part rice to 2 parts water.
Place the two cups of rice in the cooker, and add 2 tablespoons of olive oil and mix well to coat the rice. Next, add 4 cups of water, and 1 tablespoon of chicken base.
Add all of your vegetables and sausage to the pot and stir it up.
Once it is all stirred together, place the lid on the rice cooker, turn it on, and “Faget Abaddit!”
One rice cooker stops, unplug, and allow to sit for about 5 minutes and then fluff with a fork. The dish is ready to serve. enjoy and happy cooking!

2 cups white rice (Jasmine or Basmati works well)
2 tablespoons olive oil
4 cups water
1 tablespoon chicken base (Better than Bullion works best)
12 oz. Andouille Cajun style smoke sausage sliced 1/4 inch at an angle
1 med onion chopped
2 cups celery with leaves chopped
2 cups carrots chopped
1 large clove garlic minced
