Homemade snacks couldn’t be easier with my Chipotle Cheddar Jack Cheese Sticks. They are mildly spicy and made with a combination of Cheddar and Jack cheeses with a hint of chipotle pepper. These cheese sticks are great for game day, with salads, or anytime. My recipe was adapted from a Taste of Home recipe that used just Cheddar. I wanted some spice and a combination of cheese flavors and they turned out great. The cheese sticks keep well so they can be made ahead. Here’s how to make them:

This recipe works best with a stand mixer because the dough is too thick for a hand held mixer. If you do not have a stand mixer, the butter can be whipped with a hand mixer and the rest can be done manually. Preheat oven to 350 and line baking sheets with parchment paper. Start by whipping 1 stick of softened butter until light and fluffy.

Next, add in 1 cup of grated cheddar cheese and 1 cup of grated jack cheese and mix well.

Once the cheese and butter are well combined, slowly add 1-1/4 cups of all-purpose unbleached flour, 1/2 tsp. fine sea salt, and 1/4 tsp. ground chipotle pepper on low speed until well incorporated. Increase speed to medium/high and keep mixing until a dough forms and comes together, 3-5 minutes.

Press dough together in a ball and flatten on a floured surface. Gently roll out the dough to a 6×14-inch rectangle that is 1/2 inch thick.

Using a knife or a bench scraper, cut out sticks that are 1/2 wide and 6 inches long. Carefully lift the sticks and place on parchment paper line baking sheets 1 inch apart. This recipe makes 18-20 cheese sticks.

Place in a 350 degree oven for 15-20 minutes until light golden brown and crispy. Allow the cheese sticks to cool on the baking sheets for about 5 minutes before removing them and placing them on wire racks to cool completely.

Cheese sticks can be served upright in jars or glasses if desired. Store in airtight containers if there are leftovers or if not serving right away. They keep for 3-5 days. Enjoy and happy cooking!
