Even though many chefs love to cook, they still want recipes that are healthy but do not require a lot of time to prepare. This sheet pan supper is just such a recipe, an all-in-one complete meal that can be ready in under an hour. In this dish it calls for boneless, skinless, chicken thighs; however, you can substitute pork, steak, sausage, meatballs, tofu, or just use all vegetables. The recipe serves 4-6 people but can be cut in half although, leftovers are great for lunch the next day. The vegetables can also be changed up as well. Everything roasts at the same temperature on a sheet pan or two making easy work for the cook, and clean-up is a snap!. Here’s how to make it:
Start by preheating the oven to 450 degrees and prepare 2 sheet pans lined with foil sprayed with cooking spray or you can use parchment paper if making the full recipe. If cutting the recipe in half, use one sheet pan. Cut up 3 lbs. of boneless skinless chicken thighs into 1 inch chunks. Next, get the vegetables ready, which includes: 2 cups of fresh whole green beans trimmed, 2 cups of baby carrots, 3 cups of potatoes with the skins cut into 1 inch chunks, 1 lg. onion, and 1 lg. bell pepper, both cut into 1 inch pieces.
Place all the ingredients in a large pot or bowl, big enough to toss and coat with seasonings. Add 1/2 cup of good olive oil, 2 Tbl. garlic powder, 2 Tbl. dried oregano, 2 tsp. salt, and 2 tsp. pepper and mix well with your hands to ensure the oil and seasonings coat all of the meat and vegetables.
Once well coated, spread the mixture on 2 foil lined and sprayed sheet pans. Try to spread everything out as much as possible in a single layer. Place in a preheated 450 degree oven for 25-30 minutes tossing half way through.
When meat and vegetables have cooked through, remove from the oven and allow to cool for about 5 minutes before serving.
To serve, place on a plate or in a bowl and sprinkle with freshly chopped parsley. Enjoy and happy cooking!
