Plain old burgers can become boring; however, changing things up and adding some Swiss cheese and sautéed mushrooms can make for an exciting and indulgent meal. Here’s how to make them:
Start by slicing up 2-10 oz. packages of cremini or white mushrooms in 1/4 slices.
Next, melt 2 tablespoons of butter over medium heat in a large nonstick skillet. Add the mushrooms and sauté until tender, 5-8 minutes stirring often.
After mushrooms have cooked for a few minutes, add 1/2 teaspoon each of salt, pepper, granulated onion, and granulated garlic and mix well and continue cooking until desired tenderness.
When mushrooms are tender, remove from the heat and set aside. The mushrooms will be reheated just before serving. The burgers can be cooked in a pan on the stove or on the grill. Because on this particular day we had a -27 degree wind chill, I opted to use the frying pan instead of the outdoor grill.
Take 2 lbs. of ground chuck, I use 85/15, and form six large burgers. Sprinkle each burger with salt & pepper and a dash of granulated garlic. Cook to desired doneness, I usually cook to medium so they do not dry out.
Once you flip the burgers, cut up your Swiss cheese so that you have six slices of cheese about a 1/4 inch thick.
If you have a wedge of cheese, you can piece the slices together. Sometimes you can have the deli cut 1/4 inch slices for you from a round or square block of Swiss. Just before the burgers reach desired doneness, place the cheese on the burgers and cover the pan with a lid until the cheese melts. You can use a thermometer or press the center of the burger to test for doneness. The more firm it feels, the more well done it is.
Meanwhile, while the cheese melts, reheat the mushrooms. Watch the burgers carefully so that the cheese does not over melt and run off the burger. Cheese should be melted but still holding it’s shape.
To serve, spoon the heated mushrooms over the melted cheese on the burgers and serve with your favorite sides or on a bun. I served mine with fresh steamed broccoli as a low carb meal. Enjoy and happy cooking!
