This German Style Blueberry Pudding Pancake is similar to a “Dutch Baby” because it is a batter that is baked in the oven. The pancake can also be made with grated apples, with peaches, or other types of berries. The recipe is easy to make and the batter can also be made in a blender. Add some fruit to the batter, sprinkle on some cinnamon and sugar, and pop it in the oven for 30 minutes and you have a beautiful breakfast or brunch that serves 2-4 people. Here’s how to make it:
Preheat oven to 425 degrees Fahrenheit. In a medium sized bowl mix the dry ingredients: 3/4 cup all-purpose unbleached flour and 1 tablespoon of sugar. In a separate large measuring cup or small bowl whisk together 1 cup of milk, 4 large eggs, and 1/2 teaspoon vanilla until well combined. Whisk the wet ingredients into the dry ingredients until very smooth. Note* Batter can be mixed in a blender if desired.
Place batter in a greased, nonstick, ovenproof skillet. Sprinkle 2 cups of fresh or frozen whole blueberries over the batter.
Next, mix 1/4 cup of granulated sugar with 1 tsp. of ground cinnamon and sprinkle evenly over the top of the batter. Place in a 425 degree preheated oven for 30-35 minutes until golden brown and puffy. The pancake will deflate as it cools, this is normal.
Safety Note* Be sure to place a oven mitt or towel over the handles of the pan when you remove it from the oven and leave them on the handle if it has one, so not to accidentally grab it while it’s hot.
Allow the pancake to cool a few minutes before cutting. Sprinkle with powdered sugar just before serving. The pancake can be eaten alone or with other sides. We served ours with some link breakfast sausage. Enjoy and happy cooking!
