This recipe is super easy, all you have to do is pick your favorite boneless skinless fish such as cod, pollock, haddock, or any firm white fish. Next, cut it into 1-2 inch chunks, dip it in batter, and fry it in vegetable oil at 375 degrees until golden brown for about 3-5 minutes turning the pieces to ensure even browning. Oil should be deep enough to cover the fish entirely so that the batter cooks on all sides and does not touch the bottom of the pan or pot. The key to the crispy batter is to keep the batter in the fridge until just before you are ready to use it. Fry in batches so the oil stays up to temperature, and keep the fish warm in a 200 degree oven until you are done frying. If batter becomes too thick, thin it with more water. The best way to test the thickness of the batter is to do a test by frying one piece to see if you want a thinner the batter.

Ingredients:
2 lbs. boneless, skinless, firm white fish such as cod, pollock, haddock, etc., cut into 1-2 inch chunks.
Batter:
1 cup of unbleached all purpose flour
1 tsp. sea salt
1 Tbl. aluminum free baking powder
1- 1 1/4 cups cold water
Vegetable oil for frying
Whisk all of the dry ingredients together and then whisk in 1 cup of very cold water. Whisk until smooth. Test one piece of fish by frying it in vegetable oil heated to 375 degrees until golden brown. If batter is too thick, thin it with some more water. Keep the batter in the refrigerator until ready to use to keep it chilled. Oil needs to be deep enough to cover the fish so that the fish does not touch the bottom of the pan or pot. Turn the fish for even browning. Fry in batches and keep warm in a 200 degree oven on a foil lined baking sheet on a wire rack.
