Many people struggle with trying to add more healthy fiber to their diet because many forms of fiber are like eating cardboard. These Spicy Chickpea and Prune Fritters are full of flavor and fiber and a cinch to make. It’s hardly noticeable that the prunes are in there, but they add a hint of sweetness to these savory fritters that also have a touch of chipotle. Let me warn you however, they are addicting. Here’s how to make them:
Start by rinsing and draining a 1-lb. 13 oz. (29 oz.) can of chickpeas (garbanzos), and place then into a food processor.
Pulse the chickpeas until ground but slightly chunky. It is easier to do in two batches, so you don’t have some that are left too big. After pulsing, place the chickpeas in a large bowl. You want them to be chunky.
Next, coarsely chop 1 cup of dried prunes and 1 cup of chopped scallions. Add to the bowl of chickpeas and toss to evenly combine.
In the food processor, add 2 large eggs, 2 tsp. of sea salt, 2 tsp. cumin, and 1 tsp. of chipotle peppers in adobo (more if you like more heat). Blend until smooth and mix it thoroughly by hand into the chickpea mixture. Note* It’s best to blend the chipotle with the eggs because it helps to evenly distribute the heat.
After the egg mixture is incorporated, sprinkle in 1 cup of all-purpose unbleached flour over the mixture and blend well by hand.
Heat about 1/4 cup of olive oil in a nonstick pan on medium heat.
Place some flour in a plate for shaping the fritters. Take about a large golf ball size of dough, cover with flour, and flatten down into about a 3-inch round disk about a 1/4 inch thick.
Make sure that the oil is hot on medium heat before adding the fritters, so they do not absorb a lot of oil. Fry until golden brown on both sides, about 2-3 minutes per side. Drain on paper towels and then keep warm by placing them on a sheet pan with a wire rack in a 200-degree oven until ready to serve. They are so good; you may have to double the recipe.
Serve the fritters with wedges of lime to squeeze on at the table. Enjoy and happy cooking!
