When you have a craving for pizza but not a lot of time, this pizza comes together quickly. The puff pastry makes this pizza so light and tasty and the turkey pepperoni adds flavor but with fewer calories. I like to use a blend of cheeses to add more interest and visual appeal and a pinch of red pepper flakes. The key to using puff pastry for pizza is to poke the center of the dough with a fork leaving an edge around the outside that will puff up while the center remains thinner. Here’s how to make it:
Start by defrosting the puff pastry. One box usually contains 2 – 9×10 inch folded sheets. It takes about 30-40 minutes at room temperature or overnight in the refrigerator. This recipes makes two 9×10 inch pizzas. Preheat the oven to 400 degrees. Once puff pastry has defrosted, gently unfold one sheet at a time and place on a parchment lined baking sheet. With a fork, poke holes all through the middle of the dough leaving an edge around the outside which will be the outer crust of the pizza. If using both sheets of dough, line 2 baking sheets with parchment paper and repeat with second pastry dough.
Spread a thin layer of pizza sauce in the center of the pizza dough avoiding the edges.
Blend 2 cups of grated mozzarella, 1 cup of grated cheddar, and 1/4 cup grated parmesan cheese in a bowl. Sprinkle evenly over both pizzas.
Next, place the turkey pepperoni on the pizzas, about 16 slices per pizza.
Bake at 400 degrees for 15 – 16 minutes. Be sure to keep an eye on it and do not bake for more than 15-16 min. because the bottom will burn.
After 15 min. crust will be light and edges puffed up and the bottom will be brown. Remove immediately from the oven so that it does not burn as the pastry is very delicate. Allow to cool for 5-10 min. before slicing. I use a large knife and press downward to cut it instead of a pizza cutter which tends to pull the topping off the pizza.
Serve slices topped with extra parmesan cheese and a pinch of red pepper flakes if desired. Enjoy and happy cooking!
