Whenever I make cookies, I like to add nuts and cut back on the sugar to make them a little healthier. These Old-Fashioned Oatmeal Maple Walnut Drop Cookies also contain fiber from the oatmeal and protein from the walnuts. Because they are drop cookies,
Start by preheating the oven to 400 degrees. In the bowl of a stand mixer on medium high speed with the paddle, whip together 1/2 cup softened butter, 1/2 cup packed brown sugar, 1/2 cup granulated sugar, and 6 tablespoons of maple syrup until fluffy, about 5 minutes. Scrape bowl with a spatula to ensure even mixing. After 5 minutes, beat in 2 large eggs and blend until well incorporated.
While butter and sugars are blending, in a separate bowl stir together 1 3/4 cups of all-purpose unbleached flour, 1 teaspoon cinnamon, 1 teaspoon aluminum free baking powder, and 1 teaspoon of sea salt. Stir until well combined. Add the flour mixture in 3 parts to the wet ingredients and mix well scraping the sides often.
After the flour mixture is well combined with the wet ingredients, add 2 cups of old-fashioned oats (not instant). and 1 1/2 cups of chopped walnuts. Mix until all the oats and nuts are well incorporated.
Once the dough is well mixed, drop by tablespoons full onto a lightly greased cookie sheet. If using an air-filled cookie sheet, it does not require greasing or if using a silicon mat or parchment paper. Bake in a 400-degree preheated oven for 12-14 minutes. Allow cooling for a minute or two before removing cookies from the pan onto a rack or foil to continue cooling.
