Marinades are a great way to bump up the flavor of meats, fish, and even vegetables. While I like my steak to taste like steak, every now and then I like to try different marinades to change things up. When I made this bourbon marinade, my family loved it and requested it many times for steaks, kebabs, pork, and chicken. I also marinate pineapple in the same marinade and throw it on the grill with steak, pork, or chicken. Here’s how to make it:
This recipe uses 3 pounds of sirloin tip steaks. Pat the meat dry with a paper towel and set aside while you make the marinade.
In a food processor combine 2 cloves of garlic, 1 tsp. salt, 1 tsp. pepper, 1 Tbl. Chili powder, 1 Tbl. balsamic vinegar, 2 Tbl. brown sugar, 3 Tbl. olive oil, and 1/4 cup bourbon. Blend in the food processor until smooth.
Place the steak in a large sealable bag and pour in all of the marinade. Seal the bag squeezing out as much air a possible. Massage the bag for a few minutes to distribute the marinade and to cover all of the steak. Marinate for at least 1 hour and up to overnight for best flavor. Bring meat to room temperature before grilling.
Heat grill to medium high. In the mean time, remove the steaks from the marinade, pat dry with a paper towel and lay out on a sheet pan. Brush both sides lightly with olive oil and place on the preheated grill. Grill on med/high heat until desired doneness about 5-6 minutes on the first side and 3-5 minutes on the second side for medium rare. It depends on how thick the steaks are. Keep an eye on them so they do not over cook using a meat thermometer can also help.
When steak has reached desired doneness, remove from grill to a foil lined sheet pan and cover with foil. Allow to rest for 5-6 minutes. Sprinkle steaks with freshly chopped parsley and serve in whole pieces or sliced.
Leftover steak is great sliced up and heated quickly in a skillet on high heat for a few minutes for breakfast such as steak and eggs for example. Enjoy and happy cooking!
