We try to have fish at least twice a week at our house and boneless skinless fish has no waste and is a good bang for the buck. For this recipe, I was able to find Icelandic cod reasonably priced at our warehouse membership store; however, any fish or seafood can be topped with this crumb topping and baked in the oven, it’s that versatile and super simple. The thing I like about cod is that it is not farm raised and it is a firm white flaky fish that is very mild in flavor. Although, at our house, we like all seafood. This recipe is for two fillets but it can be doubled to serve more people. Here’s how to make it:
Start by preheating the oven to 400 degrees. Prepare a foil lined baking sheet sprayed with cooking spray and set aside. Next, melt 2 tablespoons of butter in a skillet over medium heat along with 1 cup of seasoned bread crumbs (I happened to have parmesan), and the zest of half a lemon. Stir the butter, bread crumbs, and lemon zest together until well combined continuing to toss and cook until the bread crumbs are golden brown. Remove from heat immediately when golden brown and place in a bowl or plate. Allow to cool for a few minutes.
Place two cod fillets (or whatever fish you have), on the foil lined and sprayed baking sheet. Top each fillet with half of the toasted seasoned bread crumbs, pressing down slightly to hold in place. Bake the fish in a 400 degree preheated oven for 15-20 minutes until fish flakes easily with a fork. It’s that simple.
Serve the fish with a wedge of lemon and your favorite sides. Enjoy and happy cooking!
