Stir-frying is a great way to get food on the table fast and using frozen vegetables can save even more time and money by not having to buy individual items and then prep them. A sweet and spicy sauce finishes this beautiful dish and is great served over jasmine rice or by itself. To make this dish even faster, defrost the shrimp and vegetables ahead of time in the refrigerator so they are ready when you need them or come home from work for example. Here’s’ how to make it:
Defrost 1 lb. of peeled and deveined raw shrimp 40-50 size, 1- 14 oz. bag of frozen of Sugar Snap Stir-Fry mixed vegetables, and 1- 14 oz. bag of frozen Broccoli Stir-Fry mixed vegetables.
Add 1 tablespoon of olive oil to a large nonstick pan over medium high heat.
Cook the shrimp quickly until opaque and light golden brown. Remove to a plate and set aside.
Next, add 1/4 cup of chopped scallions to the pan and stir-fry until crisp tender, about 2-3 minutes.
Add both bags of defrosted stir-fry vegetables to the pan and stir-fry until thoroughly heated, about 5-6 minutes.
While the vegetables cook and heat through, mix up the sauce. In a bowl or measuring cup mix together 2 Tbl. Liquid Aminos or soy sauce, 2 Tbl. packed brown sugar, 2 Tbl. freshly grated ginger, 1 Tbl. olive oil, 1 tsp. toasted sesame oil, and 1 tsp. Gochujang Korean style sauce (more if you like more heat). In a separate bowl, mix together 2 heaping Tbl. cornstarch and 1 cup of water. Be sure to mix thoroughly and again before adding it to the pan because it will separate.
When vegetables are thoroughly heated through, add the cooked shrimp back into the pan and stir well to combine.
Turn the heat up and mix the sauce before pouring it over the shrimp and vegetables. Bring to a boil. Mix the cornstarch and water again very well before pouring it into the pan stirring constantly as the sauce thickens and cook for an additional 2 minutes at a medium boil.
Once the sauce has thickened, remove from heat and garnish with chopped scallions.
Serve in bowls over jasmine rice or by itself and garnished with more chopped scallions. Enjoy and happy cooking!
