Brown rice pasta is gluten-free, and lean sweet Italian turkey sausage is low in fat, a win-win. This recipe is very easy to prepare with some fresh and some pantry items, a dish that makes it easy to feed a family. Here’s how to make it:
Start by bringing a large pot of salted water to a boil. Next, heat a large nonstick pan over medium heat sprayed with olive oil cooking spray. Sauté 1 medium chopped onion until crisp-tender then sprinkle with 1 tsp. sea salt and 1 tsp. ground black pepper. Raise the heat to medium-high and add 1- 20 oz. package of sweet Italian turkey sausage, casings removed.
Break up the turkey as it browns and then
Once turkey is cooked and evenly browned, add 1- 28 oz. can crushed tomatoes, 1- 28 oz. can fire roasted diced tomatoes and 2 tsp. Italian seasoning.
Stir the sauce well to combine, add a pinch of red pepper flakes and bring to a boil. Once it starts to boil, reduce the heat and simmer for 10 minutes. While sauce simmers, drop the pasta into the boiling water and stir well to prevent sticking. Stir pasta every now and then and check for doneness. Be sure not to overcook the pasta for best texture cook al dente as it will cook a little more in the sauce. Save some of the pasta water for thinning the sauce if necessary. When the sauce is done simmering, remove from the heat and add 1/4 cup of grated parmesan cheese and stir well.
When pasta is al dente (done but still firm), drain and add directly to the sauce.
Toss the pasta to completely coat with the sauce and add a little pasta water if needed to thin the sauce. Season with salt & pepper to taste, sprinkle with parmesan cheese and some freshly chopped parsley and serve family style or in individual dishes. Enjoy and happy cooking!
