My family loves chocolate and desserts but too much unhealthy fats and sugar are not good for our health or our waistlines. This chocolate mousse is made from creamy avocados, real unsweetened cocoa powder, vanilla, instant coffee, a pinch of salt, and sweetener which could be made with Swerve or Sevia both sugar alternatives, or raw honey. The result is a delicious dessert full of good fats and nutrients not found in standard chocolate mousse. Here’s how to make it:
What you will need are two ripe avocados, 1 teaspoon of instant coffee, 1 teaspoon vanilla, a pinch of sea salt, 2 heaping tablespoons of unsweetened cocoa powder, and a 1/2 cup of Swerve powdered Sugar or Stevia, which are sugar replacements. If you are not on the Keto diet or watching carbs, you can use honey or sugar to sweeten the mousse instead.
Place the ripe peeled avocados in a food processor and add all of the other ingredients. Pulse the food processor until all of the ingredients are combined and be sure to scrape the sides of the bowl. Once combined, turn on the food processor and allow to blend until smooth and airy about 3-4 minutes.
Once smooth and airy, spoon into dessert glasses and chill for at least one hour. Makes 2 servings. Enjoy and happy cooking!
