We love snacks at our house, especially when watching our favorite TV shows, football, or motocross racing. Many snacks are fried, high in calories, sugar, or sodium so these Baked Eggplant Sticks with Marinara Dipping Sauce are a healthy snack that can be enjoyed anytime without the guilt. Here’s how to make them:
Start by preheating the oven to 450 degrees. Line 2 baking sheets with parchment paper and spray them both with cooking spray and set aside.
In a medium bowl whisk together 2 large eggs with 1/2 cup water, 1/2 tsp. sea salt, and 1/2 tsp. pepper. In another medium bowl, place 3 cups of seasoned panko or regular bread crumbs mixed with 1/2 cup grated parmesan cheese.
Wash and dry 2 medium sized eggplants and slice them lengthwise in 1/4 inch slices and then into 1/4 inch sticks. Try to keep them the same size for even cooking. Toss the eggplant sticks with olive oil and season with sea salt and black pepper.
Dip the sticks into the egg mixture, drain, and then place into the bread crumbs pressing to make the crumbs stick.

If you prefer, you could just use store-bought marina sauce; however, the seasoned tomato paste is easy to store, inexpensive, and flavorful.
