Start by preheating the oven to 400 degrees. Pat dry with a paper towel, 1 lb. of cod fillets. Lightly season both sides with salt and pepper and place on a foil lined baking sheet sprayed with cooking spray.
There are many brands of Korean Gochujang sauce and some come with different degrees of heat, choose the one that best fits your taste. In a small bowl, mix together 2 Tbl. Gochujang sauce, 1/2 cup of finely chopped cilantro, 2 tsp. sugar or stevia, and the juice of one fresh lime. Mix together well and spread on top of each fillet.
Bake in a preheated oven at 400 degrees for 18-20 minutes depending on thickness of the fillets. Fish will flake easily with a fork when done.
When finished baking, remove from the oven and garnish with more freshly chopped cilantro and serve with lime wedges. Enjoy and happy cooking!
