Pork roast is easy to make just season well, bake on high heat for twenty-five minutes, then reduce the heat and roast it low and slow until the roast is tender and the skin is crispy. Pork is a good source of protein and Vitamin B-6 and can be used in many different recipes. Here’s how to make it:
Start by preheating the oven to 500 degrees. Line a roasting pan with foil for easy cleanup and place a roasting rack in the pan. Spray the rack with cooking spray which will also make cleaning the rack easier. Take a bone in or boneless pork shoulder or butt roast with the skin and sprinkle with salt and pepper all over. Sprinkle your favorite meat rub seasoning all over the roast and place skin side up on the roasting rack.
Any favorite rub can be used; however, for this recipe, I used Rustic Rosemary & Garlic Rub which can be found at many grocery stores or online. Once the roast has been well seasoned all over, place the roast in a 500 degree preheated oven for 25 minutes. After 25 minutes, reduce the heat to 300 degrees and continue to roast for an additional 30 minutes per pound until meat is tender and skin is crispy. For example, a 10-pound roast will cook for about 5 1/2 hours total.
When roast has reached desired doneness, remove from the oven and allow to rest for 15 minutes before carving.
As with most of my pork dishes, I like to serve roast pork with unsweetened applesauce which goes well with the pork. Leftovers can be used in sandwiches, hash, or stir-fry dishes. Enjoy and happy cooking!
