Fresh homemade yeasty rolls are a favorite at our house and they are not difficult to make. Store-bought rolls are often dry and flavorless; however, these rolls are very buttery and full of flavor. Rolls go great with any meal and are large enough to use as slider rolls. Here’s how to make them:
In a stand mixer with a dough hook, mix together 3 cups of all-purpose flour, 2 1/2 tsp. dry yeast, 2 1/2 tsp. sea salt, and 3 Tbl. of sugar making sure it is all well blended. Next, while the mixer is on low add in 1 1/2 cups of warm evaporated milk, 1/2 cup warm water, 2 large beaten eggs, and 5 Tbl. of melted butter. Add in the remaining flour and mix on medium speed until the dough just comes together and is not too sticky. The lighter the dough, the lighter the rolls, in other words, do not add too much flour to make the dough too stiff.
Line a large baking pan (I used glass), with parchment paper and melt another 5 Tbl. of butter in a microwave safe bowl or large measuring cup. Divide the dough into 12 rolls by pinching off some dough and folding it under to form a ball. Dip each roll into the melted butter and place them seam side down on the baking sheet. Allow a small space between each roll to give room for rising. Spray a piece of plastic wrap with cooking spray and cover pan lightly and allow rolls to rise in a warm place until doubled in size about 1 to 1-1/2 hours.
Preheat oven to 375 degrees. Uncover the rolls and gently brush them again with melted butter before placing them in the oven. Bake the rolls in the upper third of the oven for 18-25 minutes until golden brown.
When rolls are golden brown, remove them from the oven and allow to cool for a few minutes and then remove them from the pan and place them on a rack to finish cooling or serve warm. Do not allow rolls to sit in the pan or they will steam in the pan and become wet.
These rolls are so delicious they won’t last long. Enjoy and happy cooking!
