Start with 1 large head so cauliflower, remove the bottom leaves and the core. Cut the cauliflower florets into 1/2 inch pieces, place in a bowl and set aside.
Next, in a bowl or measuring cup mix up the sauce. Mix together, 2 Tbl. soy sauce, 2 Tbl. packed brown sugar, 2 Tbl. water, 1 Tbl. Siracha (more if you like it hotter), and 1/2 tsp. toasted sesame seed oil. Once the sauce is well blended, set aside.
In a large nonstick stick pan add 2 Tbl. of olive oil over medium heat and sauté 3 chopped scallions for 1-2 minutes then add 3 cloves of minced garlic and sauté just until fragrant. Add in all of the chopped cauliflower and turn up the heat to medium-high and toss and stir fry the cauliflower continuously until it starts to brown and is crisp-tender about 8-10 minutes.
When cauliflower is crisp-tender, add 2 Tbl. of salted butter and toss until the cauliflower is coated.
Once cauliflower is coated with butter, mix up the sauce and pour it over the cauliflower and toss to coat evenly with the sauce.
Continue to cook in the sauce tossing frequently for 2-3 minutes. At this point, taste to see if you would like more sugar, more heat, or sea salt.
Serve with wedges of lime and a garnish of scallions as a main dish or as a side dish. Enjoy and happy cooking!
