For lovers of peppers and onions, this is the dish that hits the spot. Fresh shrimp, garden fresh bell peppers and onions are tossed in olive oil with sea salt, pepper, garlic powder, and a touch of melted butter. The mixture is then roasted on a sheet pan and finished with a touch of red pepper flakes, pairs well with rice or noodles or can be served as is. Here’s how to make it:
Start with 2 lbs. of peeled and deveined raw shrimp, 2 large bell peppers (or any pepper you like), and 2 medium sweet onions. Preheat oven to 450 degrees.
Next, thinly slice the peppers and onions and place in a large bowl or pot.
Add in the peeled and deveined shrimp, 1/2 cup of olive oil, 2 tsp. sea salt, 2 tsp. black pepper, 2 tsp. granulated garlic, and 2 Tbl. melted butter. Toss all of the ingredients until well coated with the olive oil, butter, and seasonings.
Place it all of a large sheet pan or two sheet pans and roast in a 450 degree oven for 25-30 min. tossing half way through.
When vegetables are tender and shrimp is cooked, remove from oven and serve by itself, over rice, or noodles, and top with a pinch of red pepper flakes (optional). Enjoy and happy cooking!
