
This week I will be posting recipes for awesome side dishes that are great for tailgate parties and every day meals too. These herb roasted potatoes are easy to make and then packed in a thermos and will stay hot for hours making them great for tailgating or picnics.

First take your thermos (I used a 2 Qt. Size), and fill it to the top with small potatoes or quartered potatoes if they are large, this way you will have enough to fill the container. Remove potatoes and place in a large bowl and fill the thermos with very hot water and close cover to heat up the container (Be careful).

Melt 1/2 a stick of butter and a 1/2 cup of olive in sauce pan and add 1 tablespoon Garlic Powder, 1 tablespoon Herbs de Provence with Lavender, 1 teaspoon salt and 1 teaspoon pepper. Melt and heat until warm over med heat. Pour over potatoes in the bowl, toss and place on a foil lined baking sheet and bake at 400 degrees for 20 – 30 minutes tossing half way through. Check at fifteen minutes. Cooking time will vary based on size of potatoes and if they are whole our cut up. Once potatoes are done baking taste to see if they need more salt and pepper. Immediately empty hot water from thermos and dry it out (Be Carful with the Hot Stuff). Toss potatoes and pour into container along with any pan juices and cover; it will stay hot for hours. Before serving, just tip container upside down a few times to distribute the juices and serve. Tomorrow I will post another awesome side that is also great for tailgating. Enjoy and happy cooking.

Small potatoes or large quartered (Enough to fill Your Thermos)
1/2 cup Olive Oil
1/2 Stick Butter
1 Tablespoon Garlic Powder
1 Tablespoon Herbs de Provence with Lavender
1 Teaspoon Salt
1 Teaspoon Pepper (more salt and pepper if needed after baking)
