I have had various forms of this dish while traveling overseas, both Italy and Spain have their own versions. Since Italian sausage is more readily available than Spanish sausage, I used Sweet Italian for this recipe. This dish is great for a busy weeknight dinner because it can be made in about 30 minutes, here’s how you make it.
Preheat oven to 400 degrees and line a large sheet pan with aluminum foil and grease or spray with cooking spray. Remove the grapes from the stems of about a pound of red seedless grapes. You can also use green grapes or mix the two.
Take 2 pounds of sausage (sweet, hot, or both if you like), and poke each sausage a few times with a fork. The action will help prevent the sausages from bursting.
Place the sausage on the foil-lined baking sheet that has been greased or sprayed with cooking spray. After piercing all of the sausages, brush the sausages with olive oil and bake at 400 degrees for about 25 min. turning halfway through. The time may vary depending on the thickness of the sausage, but it normally takes between 20 – 30 min. turning halfway through the baking process.
After sausages are done, remove from the oven and drizzle the sausage and grapes with balsamic glaze, tossing to coat everything.
