Homemade pie crust is easy to make, especially when made in a food processor because it only takes a few minutes. The key is to use frozen butter and let the dough rest in the frig for about an hour before rolling it out. Here’s the recipe:
3 cups unbleached all-purpose flour
1 tsp. fine sea salt
2 sticks of salted butter cut into pieces and then frozen
7 tablespoons of ice water
2 teaspoons of white distilled vinegar
Place 3 cups of flour in a food processor with 1 tsp of fine sea salt and pulse to combine. Mix the 7 tablespoons of ice water with the 2 teaspoons of vinegar in another container. Add the frozen butter to the food processor and pulse until the dough looks like large breadcrumbs. Drizzle in the water-vinegar mixture a little at a time while pulsing just until the dough begins to stick together when you pinch a little of the dough. Divide the dough into two pieces and form each into a round flat piece, cover with plastic wrap, and let the dough rest in the frig for at least 30 min – 1 hr. Then, roll out each crust on a floured service and use according to the recipe.
