Hello,
My name is Randi Charron, born and raised in Northern California, I now live on a small farm in Vermont with my hubby, our dog Koji, and our cat Makato. We have chickens and geese that lay eggs and we grow our own vegetables; all of which I use in many of my delicious and easy gourmet recipes. I source as many locally grown products as possible to create healthy recipes for breakfast, lunch, dinner, crock pot ideas, cakes, and desserts.
While most of the recipes that I create are low in carbs, I do from time to time make dishes that contain pasta, potatoes, and sugar. After all, it would be boring to not have any of those things. Another favorite of mine is to bring back some classic retro dishes such as meatloaf and mashed potatoes, stuffed cabbage with mac & cheese, and burgundy pot roast with root vegetables. I have updated many of the classic recipes to healthier versions but with all the comfort of the foods we love.
Before serving six years in the Army, I worked for the Dept. of the Air Force and spent two years in Spain and was able to visit England, Portugal, and France. In the Army I had the opportunity to travel around the world and was stationed in Korea for two years and then Germany for four years. During that time I was able to also visit Italy, Belgium, Yugoslavia, Holland, and Czechoslovakia to name a few. While visiting other countries, I was able to learn much about different cultures through the foods of the region. Food has a way of bringing people together and there is also something romantic about sharing good food with the one you love.
Growing up in Northern California near Napa Valley gave me a great appreciation for wine, as well as an appreciation for the Mexican, Native American, and Japanese culture and food influences that were present in the neighborhood where my family lived. I have also traveled around the U.S. extensively. Now, living in Vermont, I have visited Canada often and have experienced the wonderful French-Canadian culture and cuisine. All of the cultural experiences have inspired me to recreate many of the recipes that I enjoyed while traveling and living in different countries so that I can share them with you, my family, and friends.
